A new piece of art!

I love doing little pieces of art that will most likely blossom in to something more...such as a full painting, illustration, or collection. I created him today. He's done with watercolor and colored pencil on canvas paper. "Red Wonder Flower With Birdie".

Bruschetta with tomato, onion, mushroom and avocado!


I love being creative and adventurous with food. I feel cooking is the perfect combination of art and science. I just whipped up this appetizer tonight. Luckily, it came out really YUMMY! I plan on making it for the next group of family and/or friends I invite over.

What you'll need:

1 medium sweet onion, chopped. I've grown to be a real fan of onion. If you're not, you can simply put in less.
1 vine tomato, diced
1 package whole white cap mushrooms, sliced. I cut the slices in half to make it easier to place on the bread.
1 avocado, diced
2 Tbsp. butter, melted
Ciabatta bread, whole loaf or pre-sliced. 8 to 10 slices
1/4 cup Stonewall Kitchen Roasted Apple Grille Marinade. I bought this at Heinen's supermarket here in Ohio. I love the sweet, smokey, and vinegar combination. If you can't find this exact one, feel free to experiment using your own.
3 Tbsp. Extra Virgin Olive Oil
Salt and pepper to taste


Directions:


Preheat oven to 350 degrees F. Place onion, tomato, mushrooms, and avocado in a bowl. Add marinade, olive oil, salt, and pepper. Slowly fold all ingredients together. If the bread isn't pre-sliced, cut the loaf in to 1 inch slices. Place the bread slices on a baking sheet. Baste each slice evenly with the melted butter. Place the baking sheet with buttered slices in to the oven, and toast until brown. I like my bread somewhat lightly done. However, feel free to bake them as you like your toast. Remove from oven and top each slice generously with the marinade concoction. Voila!

10 Ways to feel more like a kid again! (or keep your inner child)

1. Do at least 5 cartwheels a year. Inside or outside...Winter or summer...Doesn't matter as long as you rock the wheel.

2. Write your grocery list out with crayons. It's a small thing to do, but it breaks up the monotony of the drably colored list. Also, anything that lifts your spirit and adds color to your everyday routine will bring on a more youthful feeling.

3. Wear polka dotted socks to work! Whether you work in an environment where you can be the only one who knows you're wearing them...just knowing they're there adds fun to your day!

4. Have lunch or dinner in a treehouse. Come on...Who doesn't love a treehouse?! AND...who doesn't feel younger high up in a house encompassed by trees! As a bonus, bust out a clapping favorite, such as Miss Mary Mack, etc.

5. Listen to your favorite childhood song and sing along loudly! We all have one. As a bonus...dance around your living room Risky Business style!

6. Indulge in an ice cream cone with a boat load of colored sprinkles. Who doesn't feel like a kid with a big sweetly colored iced cream treat in their hand?!

7. Call up a childhood friend and reminisce. Whether you talked yesterday, 5 years ago, or are only Facebook friends(you know what I'm talking about)...Don't email them, call them! The stories that bring you back, will rekindle a youthful feeling.

8. Laugh, laugh, laugh! There are several benefits to laughter...One being it releases the feel good chemical in our brains known as dopamine. Those who are happier and healthier feel younger.

9. unwind in a bubble bath made of colored bubbles. It's just plain youthfully fun!

10. Find a giant canvas and finger paint away! When was the last time you sunk your fingers in to a boat load of colorful paints and slapped it free form on paper or a canvas? When you were 8?? EXACLTY! It's therapeutically freeing! Plus, you may create an abstract masterpiece, or reconnect with your creative side! As a bonus...Grab a friend or two and your favorite drink...FUN FUN FUN!
